Although olives originated in the Mediterranean, new
varieties of olives grow well in the hot summers of the southeast U.S. where
they are becoming a new commercial crop to produce oil. Olives are a small bushy tree, 15-20',
with sparse, gray-green semi-evergreen foliage, that produce small, flavorful
fruit with a high (20%) oil content in 1-2 years. Oil is pressed right after harvest, but to eat whole, the
fruit must be pickled and cured for 3-4 months. Does well in containers. Hardy in Zones 7-10.
